Mughlai paratha is a popular Indian street food and it is found with different recipes in different cities of the country. It is also called muglai parata, mughlai parantha and moglai parota. Whatever we call this super dish, we all enjoy it whole-heartedly.

When you are preparing your own mughlai paratha egg at the kitchen, you can certainly make some innovations in the recipe like I did. I have grown up gobbling mughlai paratha Kolkata style, so my recipe got influenced by the bong city. In Kolkata, restaurants and street food stalls roll the paratha dough with oil, but it is not easy for everyone to roll it super thin with oil. This is why I have shown you how you can also make your thin paratha using flour.

Another twist I have given to my mughlai paratha recipe is using boiled potato, bread crumbs and cheese in the paratha stuffing. But if you do not like using potato in your mughlai paratha, simply skip it. Using bread crumbs will soak the extra moisture from your paratha stuffing. And, for cheese, who does not like munching a cheesy egg paratha!

Enough talking, let’s get started with the recipe.



How to make Egg Mughlai

Ingredients

For the paratha dough,

  • All-purpose flour – 1 cup
  • Sugar – ½ tsp
  • Salt – ¼ tsp
  • Baking soda – ¼ tsp
  • Oil – 1tbsp + ½ tbsp
  • Water to knead the dough – ¼ cup (lukewarm)

For the paratha filling,  

  • Onion – 1 medium size
  • Tomato – 1 medium size
  • Potato – 1 medium size boiled
  • Salt – ¼ tsp/ as per taste
  • Piri Piri masala/ Maggie masala – ½ tsp
  • Black pepper powder – ¼ tsp
  • Garlic flakes/ chopped fresh garlic – ¼ tsp
  • Ginger powder – ¼ tsp
  • Amchur powder – ¼ tsp
  • Bread crumbs – ¼ cup
  • Eggs – 2
  • Processed cheese – 2 cubes
  • Garam masala powder – ¼ tsp

Method

  1. Mix all the ingredients and prepare soft paratha dough. Pour ½ tbsp. oil on it and cover it for 15-20 minutes.
  2. Prepare the stuffing by missing all the ingredients. (Tip: you can add an extra egg for more delicacy!)
  3. For making small-size mughlai paratha, take the paratha dough and divide it into four equal portions. If you want to make it big like the street food stalls then divide the dough into two equal portions.
  4. Sprinkle some flour on the floor. Roll one dough very thin as much as possible. put some paratha stuffing on it. And fold it like an envelope. You can use water to lock the edges or simply press with fingers well. They will not open as you rolled the paratha super thin.
  5. Take a saucepan and put oil in it. Turn the flame on and put it on medium heat.  
  6. Put the paratha for frying when oil is hot enough. After 3 minutes flip it. And, after 2 minutes again flip it.
  7. Paratha is ready. Put it on a plate.
  8. Similarly, fry the other parathas.
  9. Serve them in cutting bite-size pieces. Enjoy!
