How To Make Moist Carrot Cake & Caramelized Carrot Pouring

Demand for a super
moist healthy carrot cake is not seasonal. Special carrot cakes can be served at any time of the year on any occasion to celebrate your mood. What exactly is my
carrot cake recipe eggless. This classic dessert includes pineapple which I
think is an inseparable part of a traditional recipe.
When I thought for
creating the flavour profile of my moist carrot cake I chose cinnamon, cardamom,
drops of vanilla essence and orange zest. A nutty flavour is a must in my carrot
cake recipe healthy, so I picked up some walnuts and the addition of tutti
frutti is just giving my cake a bit of tenderness and sweetness in bites.

I served my carrot
cake with caramelized grated carrot pouring on it. When the caramel will cool
down, you will get a bit of crunchy, carroty and delicious cake top which will
make your serving extra special.

Very simple- it has
loads of carrots! And, it is perfectly moist and baked with the right ingredients
to make a good balance of flavour and texture. This tried and tested recipe
includes oil to keep the cake moist.
How To Make Carrot Cake
Ingredients
For the dry mix,
- All-purpose flour – ½ cup
- Whole wheat flour – ½ cup
- Salt – ¼ tsp
- Baking powder – 1 ½ tsp
- Baking soda – ½ tsp
- Cinnamon powder – ¼ tsp
- Elaichi powder – ¼ tsp
- Orange zest – ½ tsp
For the wet mix,
- Brown sugar – 1/3 cup
- Powdered sugar – 1/3 cup
- Flax egg – 2 (2 tbsp flax seed powder + 5 tbsp water) (substitute – ½ cup buttermilk/ ½ cup hung curd)
- Oil – 1/3 cup
- Condensed milk – ¼ cup
- Vanilla essence – 1 tsp
For later use…
- Milk – ¼ cup
- Mashed pineapple – ¼ cup
- Tutti Frutti - ¼ cup
- Walnuts – ¼ cup
Method
- Mix all the dry ingredients and keep aside
- Mix all the wet ingredients together and blend well
- Add dry mix to the wet mix in parts and prepare a smooth cake batter
- Add ¼ cup milk (room temperature) to adjust the consistency of the batter
- Add tutti frutti, walnuts and mashed pineapple & give it a quick mix
- Pour the batter in a greased cake mould
- Bake at 180°C for 50-60 minutes (oven)/ on a medium flame for
50-60 minutes (gas)/ on a medium flame for 70-80 minutes (induction oven)
- Cool the cake for 4-5 hours
How to decorate a cake
Ingredients
For preparing caramelized
carrot pouring, ingredients required are
- Water – ¼ cup
- Sugar- ¼ cup
- Grated carrots – ¼ cup
- Salt – a pinch
- Black pepper – a pinch
- Brown sugar – ½ tbsp. or less
Method
- Switch on the gas. Take a pan and add water and sugar in it.
- Dissolve sugar completely by boiling
- Add the rest of ingredients and bring it to boil
- Switch off the flame when the carrots are caramelized but still in a pouring consistency
- Pour the caramel hot on cool carrot cake
- The cake is ready to be served
How to store carrot cake
Store your carrot cake
inside an air-tight container. It will be good for up to 3-4 days.
