No Flour Dry Fruit Cake| Corn Cake Recipe Sweet| Xmas Dry Fruit Cake Part 3
Hi Friends!
As promised, here I am
with my third video of the series – Xmas Dry Fruit Cake. The truth is whether
it is Christmas or not a dry fruit cake is equally cherished by everyone all
through the year. This is a no flour dry fruit cake recipe which I have
prepared using corns. I have used both sweet corns and cornmeal.
When you prepare this
cake at home, do not try to substitute cornmeal with cornflour as they are
different and used in cakes to serve different purposes. Cornmeal has more
taste of corns and cornflour is super refined so used to form structure.

let’s start making today’s corn cake recipe sweet.
Dry Fruit Corn Cake Recipe
Ingredients:
For clabbered milk –
- Milk - 1 cup + 2 tbsp (155 ml)
- White vinegar – 1 tsp
For cake –
- Salted melted butter – 1/3 cup (75 gm)
- Powdered sugar – ½ cup
- Eggs – 2 (substitute it with 2 flax eggs / ¼ cup yogurt) (Note: 1 flax egg= 1 tbsp flax seeds powder + 3 tbsp water. Mix it & set aside for 10 minutes)
- Vanilla essence – 1tsp (optional)
- Cornmeal – 1 cup
- Milk powder – 2 tbsp
- Baking powder – 1 tsp
- Baking soda – ½ tsp
- Salt – 2 pinches
- Sweet corn boiled – 1 cup
- Tutti Frutti – ¼ cup
- Almonds – 1 tbsp
- Pista – 1 tbsp
Method:
- Take a bowl and add butter and sugar to it. Blend well to form a light and fluffy mixture.
- Add eggs one at a time. Mix again for 1 – 2 minutes.
- Sieve cornmeal, milk powder, baking powder, baking soda and salt together to the mixture. Give a gentle mix.
- Add clabbered milk to the mixture. Mix well.
- Add corns and tutti frutti to the mixture and mix again.
- Pour the cake batter to a greased cake mould. Decorate cake top with chopped almonds and pistachios.
- Bake for 60-70 minutes on medium flame (gas stove baking)/ bake at 180°C for 60 – 70 minutes. (Or, bake until your cake is completely cooked. Insert a toothpick to check if it comes out clean of the cake.)
- Serve it when cooled completely.
