No Egg Chocolate Suji Cake – Tutti Frutti Pound Cake

Cakes are everyone’s favourite and are a must for every occasion. Be it a morning snack or evening tea-time cake, a wedding or as mood-freshening, I can never say a NO to having a slice or two! Do you feel the same? Yes… Cheers!



I just love to be in the process of trying & testing new cake recipes in a bit healthier manner. Thus, I have found that a suji cake recipe easily fits into it. Suji has vitamin B, iron and magnesium. It provides energy and good for heart health too. Hence, a suji cake eggless makes a perfect choice for your sweet tooth.

I have prepared my chocolate suji cake in oven. You can bake on your gas stove or induction heater in a kadai or using a pressure cooker too.

In my sooji cake recipe in Hindi, you can see I have decorated it with tutti frutti and it is ‘eggless’ too. I have used curd in it as a binding agent. Simply I just cannot imagine a sooji cake without curd! The reason why all-purpose flour is used in my cake recipe is it allows the suji cake to hold its shape firmly.

Let’s get started with the recipe.

How to make Chocolate Suji Cake   

Ingredients

  • Espresso powder – 1 tsp
  • Hot water – 2 tsp
  • Fresh curd – ½ cup
  • Brown sugar – ½ cup
  • Condensed milk – 2 tbsp
  • Oil – ¼ cup
  • Vanilla essence – 1 tsp
  • Suji/ Rava/ Semolina – 1 cup (finely ground)
  • All-purpose flour/ maida – ¼ cup
  • Cocoa powder – ¼ cup
  • Milk – ½ cup + 2 tbsp (at room temperature)
  • Baking powder – 1 ½ tsp
  • Baking soda – ½ tsp
  • Tutti Frutti – ¼ cup
  • White vinegar – 1 tsp

Method:

  1. Mix espresso powder/coffee powder and hot water in a bowl & set aside.
  2. Take a bowl. Put curd, sugar, condensed milk, oil and vanilla essence in it. Blend well to form a smooth batter.
  3. Add suji, all-purpose flour, cocoa powder and coffee mix into the wet mix and try to form a lump-free batter.
  4. Add ½ cup milk into it and form a smooth pouring consistency batter.
  5. Cover & rest for 10 – 15 minutes.
  6. Later add baking soda and baking powder into it & give it a gentle mix.
  7. Add 2 tbsp milk to adjust the consistency of the batter (batter should not be thick).
  8. Add tutti frutti and 1 tsp white vinegar into the cake batter and give it a final mix.
  9. Instantly put it for baking. Decorate the cake top with some tutti frutti.
  10. Baking instruction for the oven – Preheat oven at 180°C for 10 min. Bake your cake for 35 – 45 min.
  11. Baking instruction for gas – Put a kadai on the gas top. Pour salt in it and spread it at the bottom. Preheat the kadai on a medium flame for 10 min. Put a stand or katora on the salt and then carefully put the cake mould on it for baking. Leave it with the lid on for 35 -45 min.
  12. Cool your cake and then demould it.
  13. Cut it and serve in your desired shapes. Enjoy with a cup of tea/ coffee!
