Bread is global need…! Right friends?

Irrespective of our geographic boundaries, we all use bread in breakfast, lunch and dinner recipes. So, if you are a baker, you should know making bread at home. My no egg no oven cinnamon bread recipe is super easy to make and extremely delicious for your taste buds.

Without wasting much time talking, let’s get started with the recipe.

Ingredients:

For preparing the dough –

  • Wheat flour/ bread flour – 1 cup/ 150 gm + 2 tbsp (for kneading)
  • Instant dry yeast – ½ tsp
  • Honey – ½ tbsp.
  • Cinnamon powder – ¼ tsp (for kneading)+ ¼ tsp (for sprinkling)
  • Vanilla essence – ½ tsp
  • Milk (lukewarm) – 130 ml
  • Butter (salted & soft) – 1 tbsp + for greasing + for brushing on the bread top
  • Tutti frutti – 1/3 cup
  • Brown sugar – ½ tsp

For egg wash –

  • 1 egg yolk + 1 tsp water

For crust –

  • Cinnamon powder – ¼ tsp
  • Dry ginger powder – ¼ tsp
  • Brown sugar – ¼ tsp
  • Salt – 1 pinch

Method:

  1. Take a bowl and add wheat flour, yeast, honey, cinnamon powder, vanilla and milk. Prepare sticky dough.
  2. Add butter to it and fold.
  3. Knead the dough for 7-10 minutes. If needed can sprinkle some flour in between.
  4. Let it rest for an hour inside a greased bowl and surely cover it with a plastic wrap or a wet towel.
  5. After the first proofing, the dough will swell up. Punch it to release gas.
  6. Take it on a rolling mat and add tutti frutti.
  7. Mix it with the dough.
  8. Roll it in a rectangular shape. Sprinkle cinnamon powder and brown sugar on the entire dough.
  9. Start rolling from one side and after each roll tuck it inside. Finally, lock the edges. Cut the rolled dough into equal pieces but don’t pull them apart. Keep them together and make the round shape again by pressing.
  10. Put all of them together inside the baking tin.
  11. Put egg wash all over the bread top. Add crust.
  12. Cover the tin and let it rest for 20-30 minutes.
  13. After the second proofing, bread dough is ready now for baking.
  14. Bake at 180°C for 25-30 minutes, or, in a preheated kadai for 25-30 minutes on low medium flame.
  15. Cool it.
  16. It’s a pull apart bread recipe too which I have made without an oven. Pull the slices and they will come out.
  17. Eat as it is or make a toast of it. Enjoy!
